Light 'N' Lean Meat Loaf

  1. Coat a large nonstick frying pan with vegetable cooking spray. Add the carrots, onions and pepper.
  2. Saute for 5 to 10 minutes. Crumble the ground beef and turkey into a large bowl.
  3. Lightly toss with the cooked vegetables, oats and rice.
  4. In a small bowl, combine the tomato juice, eggs, oregano, thyme, pepper sauce and black pepper.
  5. Add to the meat mix.
