Anzac Cookies
- 2 cups Rolled Oats - (not quick oats)
- 2 cups AP Flour
- 2 cups brown sugar (packed)
- 1 cup UNSWEETENED coconut (health food store)
- 1 teaspoon baking soda
- 3/4 cup butter - very soft
- 6 teaspoons water
- 1/4 cup cane syrup - NOT corn syrup
- 1 cup chopped walnuts
- Preheat oven to 350(F) degrees
- Spray two/three cookie sheets - or use parchment paper to line them.
- Combine rolled oats, flour, brown sugar, coconut and baking soda in stand mixer bowl and mix well.
- Add butter, water and cane syrup. (Note: dough will be dry.)
- Add enough additional water to form 1/4 cup (measuring cup) dough balls.
- Set one cookie sheet allowing plenty of room - 6 to 8 max on a sheet.
- Flatten the balls with the bottom of a glass to 3/8" thick. (Have a knife ready to scrape if cookie sticks to glass bottom.)
- Bake at 350F 12-14 minutes until ALMOST set.
- Remove from oven and let sheet REST for 3 minutes.
- Remove to a cooling rack and let them cool completely.
- Enjoy!
