Anzac Cookies

  1. Preheat oven to 350(F) degrees
  2. Spray two/three cookie sheets - or use parchment paper to line them.
  3. Combine rolled oats, flour, brown sugar, coconut and baking soda in stand mixer bowl and mix well.
  4. Add butter, water and cane syrup. (Note: dough will be dry.)
  5. Add enough additional water to form 1/4 cup (measuring cup) dough balls.
  6. Set one cookie sheet allowing plenty of room - 6 to 8 max on a sheet.
  7. Flatten the balls with the bottom of a glass to 3/8" thick. (Have a knife ready to scrape if cookie sticks to glass bottom.)
  8. Bake at 350F 12-14 minutes until ALMOST set.
  9. Remove from oven and let sheet REST for 3 minutes.
  10. Remove to a cooling rack and let them cool completely.
  11. Enjoy!
