Classic Mac & Cheese

  1. 1. Preheat oven to 375 degrees.
  2. 2. Prepare macaroni in a 6-quart saucepan according to package directions, using 3 tsp salt. Drain & set aside.
  3. 3. Melt 2 tbl butter in a medium skillet over low heat; add bread curmbs & parmigiano cheese; remove from heat & set aside.
  4. 4. Cook onions in remaining 3 tbl butter in large saucepan over medium heat, 3-4 minutes. Whisk in flour; cook 1 minute.
  5. 5. Gradually whisk in milk, cream & salt; cook, stirring constantly, 8-10 minutes until thickened.
  6. 6. Stir in 1 1/2 cups cheddar cheese, Gruyere cheese & spices. Stir in pasta.
  7. 7. Pour into buttered 9X13 inch baking dish.
  8. 8. Sprinkle with 1/2 cup cheddar cheese & bread-crumb mixture.
  9. 9. Bake 30 minutes until golden & bubbly.
