Classic Mac & Cheese
- 8 oz macaroni
- 4 tsp salt
- 5 tbl butter, divided
- 2 cups bread crumbs
- 1 cup grated parmigiano-reggiano cheese
- 1/2 medium onion, chopped
- 2 tbl flour
- 2 cups milk
- 1 cup heavy cream
- 2 cups shredded cheddar cheese, divided
- 2 cups shredded Gruyere cheese
- 1/2 tsp ground mustard
- 1/4 tsp ground red pepper
- 1/8 tsp ground nutmeg
- 1. Preheat oven to 375 degrees.
- 2. Prepare macaroni in a 6-quart saucepan according to package directions, using 3 tsp salt. Drain & set aside.
- 3. Melt 2 tbl butter in a medium skillet over low heat; add bread curmbs & parmigiano cheese; remove from heat & set aside.
- 4. Cook onions in remaining 3 tbl butter in large saucepan over medium heat, 3-4 minutes. Whisk in flour; cook 1 minute.
- 5. Gradually whisk in milk, cream & salt; cook, stirring constantly, 8-10 minutes until thickened.
- 6. Stir in 1 1/2 cups cheddar cheese, Gruyere cheese & spices. Stir in pasta.
- 7. Pour into buttered 9X13 inch baking dish.
- 8. Sprinkle with 1/2 cup cheddar cheese & bread-crumb mixture.
- 9. Bake 30 minutes until golden & bubbly.
