Oat Bran Bread

  1. In large bowl, combine flours, oats, wheat germ and oat bran. Dissolve yeast in 1/2 cup warm water, add to flour mixture. Add 1 1/2 cups water, molasses, and oil. Stir with wooden spoon to make a soft dough, adding unbleached flour as needed. Knead on floured surface until smooth and elastic.
  2. Place in a large greased bowl. Turn to coat dough. Cover and let rise in a warm place until doubled. Punch down and knead slightly. Divide dough ih half and form into two loaves; place in greased loaf pans. Cover and let rise in warm place 1 1/2 to 2 hours. Bake in 375 degree preheated oven 30 minutes or until bread pulls away from edges of pans. Remove from pan and let cool on wire racks.
