Apricot Bars
- 3/4 c. oleo
- 1 c. sugar
- 1 egg
- 1 1/2 tsp. vanilla
- 1/2 tsp. salt (optional)
- 2 c. flour
- 1 1/2 c. coconut
- 1 c. nuts (walnuts or pecans)
- 1 (10 oz.) jar apricot preserves
- You
- may
- cream butter, sugar, egg; add dry ingredients in usual
- manner
- or
- mix
- with
- pastry blender as you do pie crust. (Itut the sugar into the oleo with a fork and knife, then add the other ingredients, except preserves; it's best if you
- don't get the mixture creamy, just crumbly.) Reserve 3/4 cup
- mix
- for topping.
- Grease
- and
- flour
- 9
- x 13-inch pan. Spread
- ortat mix into pan.
- Spread with apricot preserves. Crumble
- or
- spread 3/4 cup reserved mix on top.
- Bake for 30 minutes at 350u0b0 (do not overbake).
