Banana Chocolate Chip Bread
- 2 1/2 cups flour
- 1/4 teaspoon salt
- 2 cups sugar
- 2 cups mashed ripe bananas
- 1 bag of chocolate chips
- 2 tsp baking soda
- 1 cup oil
- 4 eggs
- 1 teaspoon vanilla
- 3/4 cup toasted walnuts (opt.)
- Preheat oven to 350 degrees. Spray two 9x5 loaf pans with bakers secret. Combine flour, soda, and salt in a medium bowl. In large bowl, beat oil and sugar, add eggs one at a time, beating well after each addition. Add banana and vanilla beating well with an electric mixer. Add flour mixture, beating until just smooth. Add chips and nuts if using by hand. Spread in pans. Bake 60-65 min until toothpick inserted in the middle comes out clean. Cool on wire racks 15 min. Remove from pans and cool completely.
