Dynamite Fish

  1. Heat oven to 350.
  2. Spray nonstick pan and saute onions and mushrooms over medium heat.
  3. Mix together 1 cup of cooked onions/mushroom mixture, and the rest of
  4. the ingredients. Set aside. (You will have leftover cooked
  5. onion/mushroom mixture).
  6. Spread in a 7 1/2" x 12" baking dish. Sprinkle with kosher salt.
  7. Bake on center rack until salmon is still a little raw. Maybe about
  8. 12- 15 min.
  9. Broil on hi on top rack for approx 5 minutes until golden brown.
  10. * Serve over buttered rice.
  11. * Serve on top of Sesame Rice Medallions for Appetizers
  12. Sesame Rice Medallions
  13. Makes 8 Cakes
  14. Combine:
  15. 3 cups cooked jasmine rice
  16. 1 T. sugar
  17. 1 T. rice vinegar
  18. 1 t. cornstarch
  19. 1 t. kosher salt
  20. 2 t. sesame seeds ( just sprinkle to coat!)
  21. Olive Oil
  22. Combine rice, sugar, vinegar, cornstarch, and salt. Scoop and press rice into an 1/8 cup or 1/4 of a cup coated with non-stick spray. ( I prefer the 1/8 cup when using with the Dynamite Fish Recipe . And the 1/4 of a cup when using with dips of any kind)
  23. Fill up to desired thickness. Tap cake out onto a parchment lined baking sheet.
  24. Sprinkle sesame seeds over tops, and gently press in.
  25. Heat Olive Oil in a large nonstick skillet over med.-high heat. Add rice medallions, seed side down and saute about 5 minutes. Saute both sides until golden brown.
  26. Add additional oil if needed.
  27. * Serve Dynamite Fish on top of Sesame Rice Medallions for Appetizers.
  28. Delicious with a side of any kind; seafood, soup, etc. Also great with dips, aioli sauces, spicy mustards, wasabi and soy sauce, etc.

  31. Mix your desired amounts of ingredients:
  32. Dynasty Chili Oil
  33. Soy Sauce
  34. A bit of Fresh Chopped Garlic
  35. Mayonnaise (Best Foods)
