Chicken Cordon Blue
- redbird chicken boneless breast
- 1 or 2 slices swiss cheese
- 1 deli sliced black forest virginia ham or honey ham sliced maybe 2 times thicker than deli sliced.
- garlic powder with parsley and, or lemon pepper seasoning
- olive oil.
- place chicken in plastic bag. like one from your produce section.pound chicken to about a 3/4-1/2 inch thickness all way round.
- prepare by laying breast on cutting board, pointed end toward you.(bottom side up)
- layer cheese and ham
- roll as tight as you can, then tooth pic to hold together.spray stoneware and top of chicken with olive oil, squeeze lemon
- or orange juice as well.
- sprinkle garlic powder and parsley, spray again olive oil on top.
- bake in casserole dish or stoneware, even cast iron pot will do.
- preheat oven to 350* bake for 30 minutes.
