Cream Puffs With Spincah , Cheese And Pine Nuts
- cream puffs
- 1/2 cups shortening
- 1/8 tsp salt
- 1 c. boiling water
- 1 c. sifted all purpose flour
- 4 eggs
- spinach filling
- 1 pound spinach - washed
- 1 egg
- 1/3 cup crumbled feta
- 1/4 cup cheddar
- 3 tbsp crumbled goronzola
- 2 green onions chopped
- 3 tbsp toasted pine nuts (toast in fry pan watching carefully not to burn - just brown.)
- make the cream puffs.
- preheat oven 400 degrees.
- in saucepan combine shortening,salt until melted.Add water and bring to a boil. Reduce heat and add all the flour stirring vigourously until mixture forms a ball. remove form heat and add eggs one at a time until mixture is hold together.
- spoon onto ungreased cookie sheet and bake 30 minutes, until firm and slightly brown.Using a serrated knife slice top off each and let cool.This will allow steam to escape and puffs to remain firm.
- Prepare spinach mixture.
- Stir fry the spinach until just wilted. Remove from heat and let cool. Squeeze out as much moisture from spinach as possible - then chop. Put feta, cheddar, egg and spinach into processor and process with 4-5 quick pulses. Add gorgonzola dn chopped green onions. Process for another 2 seconds. stir in toasted pine nuts.
- fill cream puffs with spinach mixture and return to 350 degree oven for another 15 minutes.
- Allow to cool before serving.
