Salmon Burgers
- 8 ounce salmon
- 1/2 teaspoon kosher salt
- 1/2 cup diced red onion
- 1 Jalapeno pepper
- 1/2 cup Chopped Fresh Basil
- 1/2 cup Chopped Fresh dill
- 2 tablespoon Chopped Capers
- 1/4 cup Mayonaisse
- 1 teaspoon Lemon Zest
- 1 tablespoon lemon juice
- 2 clove Garlic, minced
- 2 teaspoon Dijon Mustard
- 1/2 teaspoon Ground Coriander
- 1/2 teaspoon Ground Cumin
- 1 teaspoon paprika
- 1/2 cup Panko breadcrumbs
- 1 Egg, beaten
- 2 tablespoon Olive oil
- Preheat oven to 350u0b0.
- Sprinkle salmon with salt and pepper, cumin and coriander. Roast for 10 minutes. (alternate, pan fry salmon). Cook until cooked through or slightly rare.
- In bowl, combine onion, capers, peper, herbs, spices, mayonnaise, lemon, zest, garlic, mustard, breadcrumbs, and egg. Fold in cool, flaked salmon.
- Form salmon mixture into approx 2in diam pattie.
- Fry in olive oil in medium-hot frying pan. Sear until deeply browned, 1-2 minutes per side.
- Serve with creme fraiche, sour cream, or pickles.
