Cabbage Au Gratin
- 7 1/4 cups chopped cabbage
- 3 Tablespoons margarine
- 3 Tablespoons all-purpose flour
- 1 1/4 cups skim milk
- 1/4 teaspoon salt
- 1/4 teaspoon ground white pepper
- 1/8 teaspoon ground nutmeg
- 1/4 cup (1 ounce) shredded Swiss cheese
- 1/4 cup grated Parmesan cheese
- Vegetable cooking spray
- 2 Tablespoons fine, dry breadcrumbs
- 1) Cover and cook cabbage in a small amount of boiling water in a large saucepan 10 minutes or until tender. Drain well, and set aside.
- 2) Melt margarine in a large saucepan over medium-low heat; add flour, stirring with a wire whisk until smooth. Cook 1 minute, stirring constantly. Gradually add milk; cook over medium heat, stirring constantly, until thickened and bubbly. Stir in salt, pepper, and nutmeg. Add cabbage and cheeses; stir well.
- 3) Spoon mixture into a 1 1/2-quart baking dish coated with cooking spray. Sprinkle with breadcrumbs. Bake at 375 degrees for 20 minutes or until thoroughly heated and bubbly.
