Uncle John'S Peanut Brittle

  1. Premeasure soda and peanuts; set aside for use.
  2. Mix sugar, syrup and water together in saucepan.
  3. Stir and cook continuously until mixture threads, or reaches hard crack on a candy thermometer.
  4. Add peanuts 1/2 cup at a time; stir 20 to 30 seconds. Add next portion of peanuts.
  5. Cook slowly until mixture turns light brown and peanuts smell done.
  6. Do not overcook.
  7. Remove from heat; add vanilla and butter.
  8. Stir.
  9. Add salt and soda.
  10. Stir quickly and thoroughly.
  11. Mixture will foam.
  12. Pour onto a cookie sheet and don't touch for 30 minutes.
  13. Use hot pads whenever necessary.
