Blueberry Bran Muffins
- 1 1/2 cups tll-purpose flour t\t(375 mL)
- 3/4 cup tranulated sugar t\t(175 mL)
- 1/2 cup tran cereal t\t(125 mL)
- 2 tsp taking powder t\t(10 mL)
- 1/4 tsp talt t\t(1 mL)
- 1/2 cup tmperial Margarine, melted and cooled t\t(125 mL)
- 2 tggs
- 1/2 cup tilk t\t(125 mL)
- 1 1/2 cups tresh blueberries t\t(375 mL)
- Preheat the oven to 425u0b0 F (220u0b0 C). Spray a 12-cup muffin pan with non-stick cooking spray or line with paper cupcake liners.
- In a large bowl, combine the flour, sugar, cereal, baking powder and salt. In a medium bowl, whisk together the margarine, eggs and milk. Stir margarine mixture into the flour mixture just until combined. Gently stir in the blueberries. Spoon the batter into the prepared pan. Bake 18 minutes or until a toothpick inserted into the centre comes out clean. Cool 10 minutes and then remove from pan.
