Zuchini Oat Bread

  1. Skin and slice a medium zucchini; chop in food processor (about 2 cups)
  2. Add all other ingredients
  3. Blend until smooth (you may add some or all currants by hand stirring if you don't want them blended in)
  4. Pour into muffin cups or well greased (coconut oil) loaf pan or mini loaf pans
  5. Optional add almonds to top
  6. Bake at 400 degrees appox. 25 min. - until toothpick or knife comes out of center dry (do not overcoook)
  7. Prep Time: 15 min
  8. Cook Time: 25 min

zucchini, greek yogurt, oats, salt, baking soda, baking powder, cinnamin, coconut oil, vanilla, eggs, raisins, slivers
