Zuchini Oat Bread
- 2cups grated zucchini
- 1cup greek yogurt
- 2 cups oats
- pinch of sea salt
- 1 tsp baking soda
- 1 1/2 tsp baking powder
- 2 tsp cinnamin
- 1/4 cup melted coconut oil
- 2 tsp vanilla
- 2 eggs
- 1/4 cup dried currants or raisins
- optional slivers of almonds on top
- Skin and slice a medium zucchini; chop in food processor (about 2 cups)
- Add all other ingredients
- Blend until smooth (you may add some or all currants by hand stirring if you don't want them blended in)
- Pour into muffin cups or well greased (coconut oil) loaf pan or mini loaf pans
- Optional add almonds to top
- Bake at 400 degrees appox. 25 min. - until toothpick or knife comes out of center dry (do not overcoook)
