Italian Stuffed Meat Loaf (Braciuola)
- 2 lb. ground round
- 3/4 c. bread crumbs
- 1/2 c. tomato sauce
- 1 Tbsp. each: basil and parsley
- 1 clove garlic, chopped
- salt and pepper to taste
- 4 oz. boiled ham slices
- 3 c. shredded Mozzarella
- 2 eggs, beaten
- garlic powder
- Parmesan cheese
- Preheat oven to 350u0b0.
- Combine eggs, bread crumbs, tomato sauce, parsley, garlic, salt, pepper, basil and ground round in large bowl.
- Mix well.
- Divide into 2 equal portions.
- Cut two 12 x 12-inch squares of foil.
- Sprinkle with bread crumbs.
- Pat out each half of meat mixture on foil to 9 x 12-inch rectangle.
- Arrange ham slices on top.
- Sprinkle Mozzarella on top.
- Sprinkle with bread crumbs, Parmesan cheese, garlic powder, basil, parsley, salt and pepper.
- Using foil as aid, roll up jelly roll fashion.
- Starting from long side, seal edges and ends.
- Place on greased jelly roll pan.
- Bake 50 minutes.
