Patts' Masamun Curry Tofu
- 2 400mL cans of coconut milk
- 3 tablespoons of masamun curry paste
- 2 tablespoons of peanut butter
- 1/2 cup of roasted peanuts
- 2 yellow onions
- 3 potatoes
- 2 green peppers
- 1/2 container of sliced mushrooms
- *Thai basil and fish sauce to taste
- She didn't give instructions, but I'd start with with the coconut milk and mix it with the curry paste. Heat in large skillet and add peanut butter and peanuts. Add fish sauce for saltiness. Cube potatoes and simmer in curry sauce. Slice onions and throw those in next. Add basil, peppers, and mushrooms when the potatoes are fully cooked (by the end, you want the potatoes to wind up being a little "overcooked" so that they fall apart a bit as you eat them). I might use red peppers instead of green, and I'll probably skip the mushrooms most of the time. I'll update this recipe once I try it.
- Right, and this was supposed to be a tofu curry recipe, so throw some extra firm tofu in there at some point.
