Spinach Burritos(Vegetarian)
- 1/2 c. chopped onion
- 2 garlic cloves, minced
- 2 tsp. margarine
- 1 pkg. (10 ounces) frozen chopped spinach, thawed and drained
- 1/8 tsp. pepper
- 6 flour tortillas (10 inches)
- 3/4 c. picante sauce, divided
- 2 c. shredded cheddar cheese, divided
- In a skillet, saute the onion and garlic in margarine until tender.
- Add the spinach and pepper; cook for 2-3 minutes or until heated through.
- Place about 3 Tbsp. of mixture on each tortilla; top with 1 Tbsp. of picante sauce and 2 Tbsp. of cheese.
- Place seam side down in a 13x9x2 inch baking dish that has been coated with cooking spray.
- Top with remaining picante sauce and cheese. Bake, uncovered, at 350u0b0 for 20-25 minutes or until sauce is bubbly and cheese is melted.
