Spinach Burritos(Vegetarian)

  1. In a skillet, saute the onion and garlic in margarine until tender.
  2. Add the spinach and pepper; cook for 2-3 minutes or until heated through.
  3. Place about 3 Tbsp. of mixture on each tortilla; top with 1 Tbsp. of picante sauce and 2 Tbsp. of cheese.
  4. Place seam side down in a 13x9x2 inch baking dish that has been coated with cooking spray.
  5. Top with remaining picante sauce and cheese. Bake, uncovered, at 350u0b0 for 20-25 minutes or until sauce is bubbly and cheese is melted.
  6. (Yield: 6 servings.)
