Simple And Great Pad Thai
- 1 lb of Thai rice noodles
- 4 tbls of Peanut Oil
- 1.5 - 2 tbls of crushed garlic
- 1 large Shallot sliced into strips
- 3 to 4 chopped scallions
- 1 tbls of chopped cilantro
- 1/2 lb cleaned (no shells) lrg shrimp
- 1 thinly sliced chicken breast
- 1-2 eggs scrammbled
- 2 tbls of oyster sauce
- 9-10 tbls of soy sauce
- 2 tbls lemon juice
- 2 tbls of Cayenne pepper
- 1/4 cup brown sugar
- 1/8 - 1/4 crushed unsalted peanuts
- In a large bowl soak the Thai noodles in very hot water for 20 - 25 min, till they soften.
- In a second bowl combine and mix the oyster sauce, soy sauce, lemon juice, cayenne pepper, and brown sugar.
- Add peanut oil to a wok or large fry pan over medium high heat.
- Once the oil is hot add the garlic and shallots. Cook till translucent.
- Add the chicken, shrimp, cilantro, and scallions. Cook till the shrimp turns pinkish and the chicken is cooked through.
- After the meat is cooked form a "bowl" within the wok. Add the eggs. Cook the eggs till they start getting firm, and them mix all together.
- Add Noodles, peanuts and sauce. Mix well, cook till the sauce thickens to your liking.
- Plate and garnish with whatever you'd like.
- * If you like a sweeter Pad Thai you can add coconut milk.
- * You can also add minced ginger if you'd like
