Country Apple Cupcakes With Cinnamon Cream Cheese Frosting
- -2 baking apples, peeled, cored, and finely chopped
- -1/2 cup vegetable oil
- -1/4 cup white sugar
- -1/4 cup brown sugar
- -2 eggs
- -1 tsp. vanilla
- -1 cup all-purpose flour
- -1/3 cup whole-wheat flour
- -1 tsp. baking soda
- -1 tsp. cinnamon
- -1/4 tsp. ground cloves
- -1/4 tsp. ground allspice
- -1/4 tsp. salt
- Cinnamon Cream Cheese Frosting
- -Two (8-oz.) packages cream cheese, softened
- -1 stick unsalted butter, room temperature
- -2 cups confectioner's sugar, sifted
- -2 tsp. ground cinnamon
- 1. Preheat oven to 350 F. In a large mixing bowl, combine chopped apples, oil, sugars, eggs, and vanilla. In a separate bowl, mix together flours, baking soda, spices, and salt. Add dry ingredients to wet ingredients and stir just until all ingredients are moistened.
- 2. Spray a 12-cup muffin tin with nonstick pan spray. Divide batter between cups and bake for 15-20 minutes, until a toothpick inserted into the center comes out clean. Cool in pan for 5 minutes, then on rack until completely cool. Frost with Cinnamon Cream Cheese Frosting when cool; store in refrigerator.
- 3. For frosting: In the bowl of a stand mixer beat cream cheese, butter, confectioner's sugar, and cinnamon on medium speed until light and fluffy. Chill the frosting for 20 to 30 minutes, until it has set up enough to hold its shape when spread.
