Baked Shrimp With Tomatoes And Feta
- 6 tbs. extra virgin olive oil
- 3 large shallots diced
- 4 garlic cloves
- 1 1/2 lbs. grape tomatos slices in half
- 1/2 tsp.red pepper flakes
- 1 1/2 lbs. shrimp peeled and de-veined
- 8 oz. crumbled feta
- 2 tsp fresh oregano chopped
- 2 tbs. fresh mint chopped
- salt and pepper
- Heat oven to 400. Put 4 tbs. oil in a large skillet over medium heat. Add shallots and garlic stirring, cook till softened, 5-10 minutes. Do not allow to brown. Add tomatoes, red pepper flakes, oregano, and salt and pepper, and cook until tomatoes are softened 10 minutes. Transfer mixture to a baking dish, arrange shrimp on top, sprinkle feta over shrimp, and bake for 10-12
- minutes. Sprinkle generously with mint and serve.
