Cheese Bread
- 4 cups all-purpose flour, divided
- one package (2 1/4 tsp.) active dry yeast
- 1 1/2 cup shredded American or Swiss cheese
- 1 1/4 cup water
- 1/4 cup sugar
- 1 1/2 teaspoon salt
- 1 egg
- In a large bowl, combine 1 1/2 cup all-purpose flour & one package (2 1/4 tsp.) active dry yeast. Heat shredded cheese, water, sugar, & salt just until warm (115-120u0b0F) stirring constantly. Add to flour mixture; egg. Beat at low speed of electric mixer for 30 seconds, scraping sides. Beat 3 minutes at high speed. Stir in as much of 2-2 1/2 cups of all-purpose flour as you can mix in with a spoon. On a floured surface, knead in enough of the remaining flour to make a moderately stiff dough that is smooth & elastic (6-8 minutes total). Shape into a ball & place into a greased bowl; turning once to coat. Cover & let rise in a warm place till double (1-1 1/4 hour).
- Punch down; divide in half. Cover; let rest 10 minutes. Shape into 2 loaves; place into greased 8x4x2" loaf pans. Bake in a 350u0b0 for 40-45 minutes. Cover for the 20 minutes. Makes 2 loaves.
