Grilled Salmon With Onion Honey Compote
- 2 tablespoons butter
- 3 cups sliced red onions
- 2 tablespoons red wine vinegar
- 1 cup dry red wine
- 2 whole cloves
- 1 bay leave
- 4 tablespoons honey
- salt and pepper to taste
- 3 tablespoons olive oil
- 1 1/2 cups diced fresh red tomatoes, cored removed, cut into 1/4 inch cubes
- 1 tablespoon finely chopped garlic
- 2 sprigs fresh thyme
- 1/4 teaspoon red pepper flakes
- 4 boneless salmon filets with skin 6 ounces each
- basil leaves or parsley to garnish
- 1 preheat broiler to high
- 2 In a saucepan heat 1 tablespoon butter, add onions, cook briefly till wilted, add vinegar, wine, cloves, bay leaves, honey and salt and pepper. Bring to boil, then cook over medium heat, stirring often until liquid is mostly evaporated. Add remaining butter keep warm.
- 3 In a small saucepan heat 1 tablespoon olive oil, tomatoes, garlic, thyme, pepper flakes, salt and pepper. Cook over high heat, tossing and shaking. Blend well
- 4 sprinkle salmon with salt and pepper, brush with remaining olive oil. Place fillets skin side up 4 to 5 inches from heat cook 2 minutes turn onto skin side and cook for 3 minutes.
- 5 remove skin from salmon
