Colorado Buffalo Tacos
- 1 tablespoon canola oil
- 1/2 cup chopped onion
- 1/2 cup chopped green bell pepper
- 3 garlic cloves, chopped
- 1 Tablespoon + 1 teaspoon ground cumin
- 1 pound buffalo, ground
- 1/2 cup tomato sauce
- 1/4 cup golden raisins
- 1/4 cup pecans, roasted and chopped
- 1/4 cup cilantro, chopped
- 12 taco shells
- shredded lettuce
- grated cheddar cheese
- chopped fresh tomatoes
- salsa
- sour cream
- chopped cilantro
- Heat oil in large skillet over medium-high heat. Add onion, green pepper and garlic and saute until soft, about 5 minutes. Add cumin and stir one minute. Add buffalo and cook until brown, breaking up with wooden spoon, about 10 minutes. Add tomato sauce, raisins and pecans and cook until heated through, stirring occasionally, about 5 minutes. Stir in cilantro. Season with salt and pepper.
- Spoon meat filling into each taco shell and pass extras as garnishes. Ole!
