Super Bran Muffins
- 2 cups All-Bran Cereal
- 2 cups boiling water
- 1 cup vegetable oil
- 2 cups brown sugar
- 1/2 cup honey
- 1/2 cup molasses
- 4 eggs
- 4 cups buttermilk
- 5 cups flour (spelt, whole wheat or combination of flours)
- 5 teaspoons baking soda
- 2 cups old fashioned oats or six grain cereal
- In large container combine bran cereal with boiling water; let stand for 10 minutes or until water is absorbed
- Meanwhile, in another large bown, beat together oil, sugar, honey, and molasses. Beat eggs into mixture. Add buttermilk, stir in bran mixture. In another bowl combine and mix flour, soda, and oats; slowly blend flour mixture into bran mixture. Cover and refrigerate batter overnight.
- Coat muffin tins with non-stick spray or use paper liners; spoon in batter filling two thirds full.
- Bake at 400 degrees for about 17 minutes or until done.
