Banana Split Sandwich
- 2 large ripe bananas
- 1 package (18.25 oz) French Vanilla Cake Mix
- 1 tsp baking soda
- 1/2 cup butter, softened
- 2/3 cup buttermilk
- 3 eggs
- 1 tsp vanilla
- 1 (8oz) can crushed pineapple, drained
- 1 cup chopped maraschino cherries
- 1 cup chopped chopped walnuts
- Half Gallon Vanilla ice cream, softened
- 1 jar Hot Fudge Topping
- Whipped cream, for garnish
- Maraschino Cherries, for garnish
- Preheat oven to 350 degrees F. Grease and flour a 9x13 inch pan. In a small bowl, mash bananas with a fork and set aside. In a large bowl, combine cake mix and baking soda. Stir to combine. Add bananas, softened butter, buttermilk, eggs and vanilla. Beat at low speed until moistened (about 30 seconds). Beat at medium speed for 2-3 minutes. Pour into prepared pan.
- Bake in the preheated oven for 30 to 35 minutes. Let cake cool. While the cake is cooling, mix the pineapple, cherries and nuts into the ice cream. After cake has cooled, remove from pan and split in half horizontally. Place the bottom layer back in the pan. Spread the softened ice cream mixture evenly over the bottom cake layer. Place top cake layer over the ice cream. Cover and freeze. To serve, spoon hot fudge sauce over each cake slice and garnish with whipped cream and a cherry.
