Twelve Vegetable Turkey Soup
- 1 onion, chopped finely
- 3 tbsp. garlic, chopped finely
- 4 stalks celery, sliced
- 1 green pepper, chopped
- 1/2 lb. mushrooms, sliced
- 1 tbsp. olive oil
- 2 lbs. turkey breast
- 5 small Yukon gold potatoes, cubed
- 1 bunch carrots, sliced
- 2 zucchini squash, sliced
- 1 can corn
- 1 can green beans
- 1 can diced tomatoes
- 1 can white navy beans
- 2 tbsp. tomato bouillon (Knorr brand is good)
- Saute the first 5 ingredients in oil. In water to cover the turkey, potatoes, and carrots, simmer in a large pot. Add the vegetables from the saute pan. Add the canned vegetables and bouillon. Simmer slowly until tender.
