Bran Muffins
- 2 1/2 c. whole wheat flour
- 2 1/2 c. all-bran cereal
- 1 1/4 tsp. salt
- 2 Tbsp. sugar
- 1 Tbsp. baking powder
- 2 c. skim milk
- 1/2 c. canola oil or other vegetable oil
- 5 large eggs, beaten, or egg substitute
- 1 c. pecans or walnuts, chopped
- 1 c. honey
- 2 tsp. vanilla
- 3/4 c. raisins
- 2 c. grated carrots
- 1 c. crushed pineapple (drain first)
- 2 apples, chopped coarsely
- 3/4 c. chopped dates
- 12 prunes, cut into small pieces
- Preheat oven to 350u0b0.
- Mix raisins, milk and bran together; let soak for 15 minutes to soften.
- Combine rest of liquids and add to bran mixture.
- Mix all dry ingredients, fruit and nuts; add to bran mixture.
- Do not overmix.
- Fill greased muffin cups or muffin papers to top.
- Bake for 30 to 40 minutes.
- Makes about 2 dozen.
