Mama Pike'S Lasagne
- 1 - 2 boxes lasagne noodles, boiled until just limp
- 2 lb hot italian sausage, browned and broken up
- 4 24 oz jars marinara sauce
- 4 lb part skin ricotta cheese
- 3 eggs
- 2 tsp oregano
- 1 tbsp garlic powder
- 1 cup grated parmesan cheese
- 1 lb mozzerella cheese, grated
- 1 cup sliced basil
- Add sauce to browned italian sausage. Mix well and set aside. In a large mixing bowl, blend ricotta, eggs, oregano, garlic powder and parmesan until well blended.
- In a 13 x 9 baking dish, lightly coat bottom with sauce. Lay noodles over to completely cover, cutting to fit. Top with 1/2 of the ricotta mixture, 1/2 of the basil leaves and 1/3 of each of the remaining sauce and mozzerella. Repeat layer, starting with noodles. Top with remaining noodles, then remaining sauce and mozzerella.
- Bake at 350 for an hour until top is browned and bubbling. Cool for at least 15 minutes before cutting (or cool completely and re-warm).
