Steak Kew
- 1 Tbs. peanut oil
- 8-10 dried shitake mushrooms, soaked in warm water for 15 minutes or until soft, drained and quartered
- 3/4 lb. filet mignon, cut into 1-inch cubes
- 1 clove garlic, chopped
- 3 slices ginger, minced
- 1 scallion, chopped
- 1-1/2 Tbs. oyster sauce
- 1 Tbs. soy sauce
- 1/2 tsp. sugar
- 2 tsp. cornstarch
- 1/4 lb. snow peas
- Combine garlic, ginger, scallion, oyster and soy sauces, sugar and cornstarch in bowl and add cubed filet mignon. Mix well and marinate 15-30 minutes.
- Remove and discard tips of snow peas. Wash and drain. Bring 1 qt. of water to a boil. Add snow peas and stir well. When water boils again, remove from heat, drain, and run cold water over snow peas.
- Heat peanut oil in wok or non-stick fry pan over medium high heat. Add mushrooms, stir-fry 1/2 to 1 minute. Add meat mixture, stir-fry 1 to 2 minutes. Add snow peas, mix well. Pour into dish and serve hot with cooked rice.
