Banana Nut Muffins
- Muffins:
- 1 c brown sugar
- 1 c whole wheat flour
- 7/8 c wheat bran
- 1/8 c milled flax seed
- 1 tsp salt
- 1 tsp soda
- 1 c crushed pecans
- 1/2 tsp all spice
- 1/4 c butter
- 1/4 c applesauce
- 1/4 c buttermilk
- 3 crushed bananas (grate if not super ripe)
- 1 cup oatmeal
- Topper:
- 1/4 oatmeal
- 2 Tbs butter
- 1 Tbs honey or brown sugar
- Mix sugar, flour, bran, flax seed, salt, soda, pecans, and allspice.
- Add butter and applesauce, mix.
- Add buttermilk and bananas, mix.
- Add oatmeal, mix.
- Pour into papered muffin pans.
- If you want a topper heat together your topper ingredients in a small skillet until coated all over. Then Sprinkle onto muffins before they go into an oven.
- Bake in 350 degree oven for approximately 30 minutes. Watch and check for done-ness with toothpick.
