Caribbean Chicken Kebabs
- 1/3 C orange juice
- 1/4 C soy sauce
- 1 t minced fresh ginger
- 2 garlic cloves, minced
- 2 lb boneless skinless chicken breasts cut into 1 1/2" pieces
- 1 sweet onion, cut into 1 1/2" pieces
- 1 green and 1 red bell pepper, cut into 1 1/2" pieces
- 1 pineapple, cubed
- 1 pint cherry or grape tomatos
- Butter, lime juice, cayenne powder, garlic salt
- Marinade: combine orange juice, soy sauce, ginger and garlic in shallow dish. Add chicken and onion, stir, cover, and refrigerate for 3-6 hours. Drain chicken and onion, discard marinade.
- Skewers: Thread chicken, onion, peppers, pineapple and tomatos on 10" skewers, brush with lime cayenne butter. Grill on Med 325-350 for 8 - 10 min, turn and baste several times with butter.
- Lime -cayenne butter: melt 1/2 C butter and stir in 2 T fresh lime juice. 1/2 t cayenne powder and 1/2 t garlic salt
