Caribbean Chicken Kebabs

  1. Marinade: combine orange juice, soy sauce, ginger and garlic in shallow dish. Add chicken and onion, stir, cover, and refrigerate for 3-6 hours. Drain chicken and onion, discard marinade.
  2. Skewers: Thread chicken, onion, peppers, pineapple and tomatos on 10" skewers, brush with lime cayenne butter. Grill on Med 325-350 for 8 - 10 min, turn and baste several times with butter.
  3. Lime -cayenne butter: melt 1/2 C butter and stir in 2 T fresh lime juice. 1/2 t cayenne powder and 1/2 t garlic salt
