Drunken Souvlaki-Style Chicken
- 4 Boneless, Skinless Chicken Breasts, cut into strips
- Marinade:
- 1 bottle of light beer
- 1/4 c. lime juice
- 1/4 c. red wine vinegar
- 1 T. minced garlic
- 1 T. dried oregano
- Salt & pepper to taste
- Tzatziki-style sauce:
- 1/2 c. light mayonnaise
- 1/2 c. plain low-fat yogurt
- 1 T. lemon juice
- 1 med. cucumber, peeled & diced
- 1 t. dried oregano
- 1/8 t. ground fresh black pepper
- Salt to taste
- 6 pita breads
- Olive oil
- Garlic salt
- Cooking Spray
- Skewers
- Place chicken and next 7 ingredients in a large zip-lock plastic bag. Shake lightly to mix, refrigerate 2 hours to overnight.
- Mix the next 7 ingredients in a small bowl, refrigerate.
- Brush pitas with olive oil, sprinkle with garlic salt. Place pitas on grill, cook until lightly browned, about 1 minute each side, put in foil and keep warm.
- Thread chicken strips onto skewers. Spray grill or grill pan with cooking spray. Cook chicken until done, about 15 minutes.
- Serve chicken with warm pitas and sauce.
- Optional: Garnish with shredded lettuce, sliced tomatoes & greek olives.
