Sweet Potato Casserole

  1. Wash sweet potato, cut in half lengthwise, then in 1-inch slices. Cook in water to barely cover until both are tender.Drain thoroughly, pressing out excess water with back of spoon. Mash sweet potato with potato masher.
  2. Meanwhile, saute onions and garlic in 1 Tbsp of butter until onions are tender.
  3. Mix with half the butter, onions & garlic, the cracker crumbs, eggs, sugar, to taste, salt and pepper.
  4. Pour into greased casserole dish.
  5. Pour remaining butter on top and sprinkle with additional cracker crumbs or dried fried onions.
  6. Bake at 375F for 45-60 minutes, or until top is golden brown and bubbly.
