Southern Comfort Bundt Cake
- 1 box yellow cake mix
- 4 eggs
- 1/2 cup cold water
- 1/2 cup vegetable oil
- 1/2 cup Southern Comfort
- Chopped walnuts
- Glaze:
- 1/2 cup butter
- 1/8 cup water
- 1/2 cup sugar
- Lightly coat bundt pan with cooking spray and dust with flour.
- Combine all ingredients except walnuts.
- Beat for 2 minutes, scraping sides of the bowl until well mixed.
- Pour batter into bundt pan.
- Bake in preheated 325F oven for 1 hour.
- Cool 10 minutes in pan on rack.
- Remove from pan. Poke with toothpick or fork all over.
- Glaze:
- Melt butter in pan.
- Add water and sugar. Boil for 3-4 minutes stirring constantly.
- Remove from heat.
- Stir in 1/4 cup Southern Comfort and mix thoroughly.
- Pour half of glaze over the cake. Wait a while.
- Reheat glaze and put more ont he cake.
- Repeat until glaze is gone.
- Stir in walnuts.
