Glorified Cabbage-- Karen Fowler
- 3 tbsp butter
- 2 tbsp flour
- 1 tsp salt
- dash of pepper
- 1 tsp prepared mustard
- 1-1/3 cup milk
- 1 egg yolk , beaten
- 2 cups shredded cabbage
- 1 cup onions, thinly sliced
- 1 cup shredded cheese
- 1 cup buttered bread crumbs, toasted ( can use pepperidge farm dressing)
- Melt butter, add flour, salt, pepper and mustard, stirring constantly until bubbly. Add milk and continue stirring until thickened. Add egg yolk and cook one minute .
- Into a baking dish, place layers of half the cabbage, onions cheese and cream sauce. Repeat layers, using the rest of the ingredients.
- Top with buttered crumbs, cover and bake in 375 deg oven for 30 minutes. Uncover and bake an additional 5 minutes of until lightly browned.
