Buttermilk Biscuits
- 2 c. flour
- 1/4 c. wheat germ
- 2 tsp. baking powder
- 1 tsp. sugar
- 3/4 tsp. salt
- 1/2 tsp. baking soda
- 1/3 c. cold shortening
- 3 Tbsp. cold butter
- 3/4 c. and 1 Tbsp. cold buttermilk
- Add dry ingredients to mixer bowl.
- Whisk to blend.
- Cut cold shortening and butter into small pieces and add to bowl.
- Mix on stir for 1 minute until the mixture resembles coarse crumbs. Continue on stir while adding the 3/4 cup of cold buttermilk.
- Mix just until moistened.
- Form dough into a ball and turn out onto lightly floured board.
- Knead 5 to 6 times and roll out to 1/2-inch thick.
- Cut into 2 inch rounds.
- Arrange biscuits on greased baking pan.
- Brush with 1 tablespoon buttermilk.
- Bake at 450u0b0 for 15 minutes.
- Yield:
- 16 biscuits.
