Winter Soup
- 1 (14 oz.) can whole peeled tomatoes, drained and chopped (reserve juice)
- 4 medium potatoes, diced
- 4 large carrots, diced
- 2 each green and red peppers, cut into 1/4-inch pieces
- 3 Tbsp. butter or margarine, melted
- 1 1/2 c. chopped onions
- 1 Tbsp. chopped garlic
- 1 lb. top round of beef, cut into 1/4-inch cubes
- 2 Tbsp. flour
- 2 Tbsp. paprika
- 3 Tbsp. tomato paste
- 4 (13 1/2 oz.) cans tomatoes and juice
- beef broth plus water to equal 2 qt.
- 1 bay leaf
- 1/2 tsp. marjoram
- 1/2 tsp. caraway seed, crushed
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/2 c. sour cream
- Drain and chop tomatoes; reserve juice.
- Dice potatoes and carrots.
- Cut green and red peppers; set aside.
