Chicken Tortilla Soup
- 1 small onion, chopped
- 1 clove garlic, minced
- 2 Tbs. vegetable oil
- 1 - 4 oz. can chopped green chilies
- 1 can beef broth, undiluted
- 1 can chicken broth, undiluted
- 1 can cream of chicken soup, undiluted
- 1 - 2 cups diced, cooked chicken
- 1 1/2 c. water
- 1 Tbs. A-1 steak sauce
- 2 tsp. Worcestershire sauce
- 1 tsp. ground cumin
- 1 tsp. chili powder
- 1/8 tsp. pepper
- 12 oz. shredded Cheddar cheese
- paprika, optional
- tortilla chips
- Saute onion and garlic in hot oil. Add remaining ingredients except cheese, paprika, and chips. Bring to boil, cover and reduce heat. Simmer for one hour. Add cheese and simmer uncovered for 10 minutes. Sprinkle with paprika, if desired. To serve, place tortilla chips in individual bowls and cover with soup. Serve immediately and listen for raves!
