Alsatian Tarte Flambée
- 155 g flour
- 50ml melted butter (45g)
- 1/2 t salt
- 1/2 cup warm water
- 3T olive oil
- 2 onions, thinly sliced
- 2-3 slices smoked bacon
- 1 c creme fraiche or combination of creme fraiche and fromage blanc
- 1c shredded gruyere
- Preheat oven to 500 with a pizza stone in place.
- 1. Combine flour, butter, salt and water in a food processor. Process 5 minutes till a dough forms. Form into a ball, flouring lightly and allow dough to rest, covered with a kitchen towel for 20 min.
- 2. Meanwhile sautee onions gently in oil till lightly golden (45 min). Set aside. In same pan sautee bacon til not quite crisp. Drain on paper towel then break into 1/2" pieces.
- 3. Divide dough in half and roll two very thin rounds approx. 10"x 14"on a pizza peel or the bottom of a sheet pan. Brush with oil and slide onto the pizza stone. Bake till beginning to turn golden.
- 4. Remove the crust from the oven, spread with creme fraiche, cover with onions, bacon and cheese. Bake till cheese melts.
- Make ahead: The crust can be baked and the onions and bacon cooked several hours in advance.
