Apple Harvest Pound Cake With Carmel Glaze
- 2 cups white sugar
- 1 1/2 c veg oil
- 2 tsp vanilla
- 3 eggs
- 3 c flour
- 1 tsp baking soda
- 1/2 tsp cinnamon
- 1 tsp salt
- 3 med granny smith apples-peeled, cored and chopped into small thin slices
- 1 c finely chopped walnuts
- Glaze: 1/2 c butter, 2 tsp milk and 1/2 c dark brown sugar
- Preheat oven to 350. Grease 9 inch Bundt pan. In large bowl, beat the sugar, oil, vanilla & eggs w/electric mixer until light and fluffy. Combine flour, baking soda, cinnamon & salt; stir into batter until blended. Fold in the apples & walnuts. Pour into greased bundt pan. Bake 1 hour 20 min until toothpick inserted in crown comes out clean. Allow to cool 20 minutes then invert on a wire rack Glaze time: Heat the sugar, then remove from heat. Drizzle over the warm cake. For easy clean up, have foil under cooling rack.
