Almond-Chocolate Christmas Bars
- Crust:
- 2-1/4 c. flour
- 3/4 c. granulated sugar
- 1 c. cold butter cut into Tbs.
- 1 egg
- 1 tsp. almond extract
- Filling:
- 2 c. semi-sweet chocolate chips
- 8 oz. cream cheese
- 1 small can evaporated milk
- 1 tsp. almond extract
- Preheat oven to 375 degrees.
- Coat a 9X13 pan with cooking spray.
- Crust:
- In food processor combine flour, sugar and butter to resemble a fine meal. Reserve 1 cup of mixture. To remainder, add the egg and 1 tsp. of almond extract and mix well. Press egg mixture into pan. Set aside.
- Filling:
- Over medium-low heat, melt chocolate chips with the cream cheese and evaporated milk, stirring till smooth. Remove from heat; stir in walnuts and remaining almond extract. Spread chocolate mixture evenly over the crust; sprinkle reserved cup of crust mixture evenly over the chocolate.
- Bake at 375 for 18-23 minutes. Top should be barely golden and cookies just pulling away from edge of pan.
- Cool completely and cut into small bars.
