Dreamy Peanut Butter Cookies
- 1 C smooth peanut butter
- 1 C dark brown sugar
- 1/2 C unsalted butter
- 2 TBS corn syrup
- 1 TBS vanilla extract
- 2 large eggs
- 2/3 C white whole wheat flour
- 2/3 C oat flour
- 1 tsp baking soda
- 1/2 C peanut butter chips
- 1/2 C butterscotch chips
- 1/2 C granulated sugar for coating
- Use silicon baking sheets or parchment paper to line cookie sheets, and set aside.
- Beat together the first 6 ingredients until well-blended (2-3 minutes).
- Add the flours and baking soda.
- Add the chips.
- Chill at least 1 hour or longer. Overnight is better.
- Using a 1 inch cookie scoop, make a ball of dough.
- Roll it in granulated sugar.
- Place on cookie sheet and flatten gently with fingers or the bottom of a glass.
- Bake x 15-17 minutes (for chewy cookies) or 18-20 (for crispy).
- Cool on cookie sheets for 10 minutes, then move to baking racks to finish cooling.
