Nola'S Key Lime Pie
- Crust
- 1/3 box graham crackers (one wrapped segment)
- 5 tbsp. butter (melted)
- 1/3 cup sugar
- Filling
- 3 egg yolks
- 1 1/2 tbsp. lime zest
- 1 14 oz. can sweetened condensed milk
- 2/3 cup freshly squeezed key lime juice (about 25 key limes or 6-7 regular limes)
- Crust
- 1. Preheat oven to 350.
- 2. Butter 9" pie pan.
- 3. Break up crackers to crumbs. Add melted butter and sugar and pulse until combined.
- 4. Press into bottom and sides of pan, bake until set (approx. 8 minutes).
- Filling
- 1. Beat egg yolks and lime zest until very fluffy (5 minutes).
- 2. Gradually add condensed milk and continue to beat.
- 3. Add lime juice slowly, mixing just until combined.
- 4. Pour mixture into crust and bake 10 minutes.
