Mussels Stuffed With Parmesan Cheese And Olives

  1. Preheat oven to 350 degrees.
  2. Remove mussel meat from shells, save shells.
  3. Chop mussels and set aside.
  4. In a large skillet over medium heat melt butter.
  5. Add green onions, salt, black pepper, oregano and minced garlic.
  6. Cook until garlic is lightly browned. Transfer mixture into a bowl and
  7. add chopped mussels, bread crumbs, white wine, parsley, black olives
  8. and parmesan cheese; mix thoroughly.
  9. Pack mussel mixture into 18 large half shells and arrange in a large
  10. shallow baking pan. Drizzle butter on top.
  11. Bake 10 minutes.
