Mussels Stuffed With Parmesan Cheese And Olives
- 3 dozen large mussels, cleaned and steamed
- 4 Tbs sweet butter
- 1/2 cup green onions, thinly sliced
- 1/2 tsp sea salt
- 1/2 tsp freshly ground black pepper
- 1/2 tsp oregano
- 1 clove garlic, minced
- 4 cups Italian style bread crumbs
- 1/4 cup dry white wine
- 1/4 cup freshly minced parsley
- 3 Tbs black olives, chopped
- 4 Tbs grated Parmesan cheese
- 1/2 cup melted butter
- Preheat oven to 350 degrees.
- Remove mussel meat from shells, save shells.
- Chop mussels and set aside.
- In a large skillet over medium heat melt butter.
- Add green onions, salt, black pepper, oregano and minced garlic.
- Cook until garlic is lightly browned. Transfer mixture into a bowl and
- add chopped mussels, bread crumbs, white wine, parsley, black olives
- and parmesan cheese; mix thoroughly.
- Pack mussel mixture into 18 large half shells and arrange in a large
- shallow baking pan. Drizzle butter on top.
- Bake 10 minutes.
