Marinated Vegetables
- 1 lb. whole button mushrooms
- 2 green bell peppers, julienne
- 2 red bell peppers, julienne
- 3 carrots, angle cut
- 4 cups cauliflower floweret's
- 2 onions, julienne
- 1 cup pimento stuffed olives
- 1/2 cup black olives
- fresh mozzarella cheese, julienne
- 3 1/2 cups red wine vinegar
- 1/2 cup sugar
- 3 tsp. salt
- 1 tsp. fresh black pepper
- 2 tsp. oregano
- 2 cups olive oil
- Blanch the carrots, cauliflower and onions, immediately refresh in cold water and drain.
- Heat(do not boil) vinegar; stir in the sugar, salt, pepper and oregano until sugar dissolves. Cool slightly and whisk in the oil, pour over vegetables and marinate 24 hours. Do not add cheese at this time. Let mixture sit in refrigerator at least 2 hours then add cheese.
- Remove from frig and let stand at room temp. for a little while. Adjust seasonings if needed.
- To serve; line platter with red leaf lettuce, and pile on vegtables.
