Company Chicken Cordon Bleu

  1. Place each chicken breast between two sheets of wax paper; flatten to 1/4-inch thickness.
  2. Use meat mallet or rolling pin. Combine eggs and milk.
  3. Brush side of chicken with milk.
  4. Put a piece of ham and piece of cheese in center of chicken breast. Brush cheese with milk mixture.
  5. Turn ends over cheese and ham. Roll up, beginning with long side.
  6. Secure with toothpicks. Dredge chicken in flour.
  7. Dip in remaining milk mixture.
  8. Coat well with bread crumbs.
  9. Cover
  10. and chill 1 hour.
