Company Chicken Cordon Bleu
- 8 chicken breasts, skinned and boned
- 1/4 tsp. salt
- 1/4 tsp. white pepper
- 2 eggs, beaten
- 1 c. milk
- 4 (1 oz.) pieces ham, cut in half
- 1/3 c. all-purpose flour
- 1 1/3 c. dry bread crumbs (fine)
- vegetable oil
- mushroom sauce
- Place each chicken breast between two sheets of wax paper; flatten to 1/4-inch thickness.
- Use meat mallet or rolling pin. Combine eggs and milk.
- Brush side of chicken with milk.
- Put a piece of ham and piece of cheese in center of chicken breast. Brush cheese with milk mixture.
- Turn ends over cheese and ham. Roll up, beginning with long side.
- Secure with toothpicks. Dredge chicken in flour.
- Dip in remaining milk mixture.
- Coat well with bread crumbs.
- Cover
- and chill 1 hour.
