Shrimp And Grits

  1. Fry the bacon until crispy and remove from skillet. Reserve bacon.
  2. Lower heat to low and add the pepper and onion. Allow to cook 5-10 minutes until soft.
  3. Meanwhile bring chicken stock to a boil.
  4. When it has boiled, add the polenta, whisking as you add. Lower the heat and let it simmer, stirring frequently.
  5. Add the shrimp to the veggies, and cook about 8 min. until opaque, and remove from skillet.
  6. When the polenta has reached desired consistency, add the butter and cheese, and season with salt and pepper to taste.
  7. Put about a cup of grits in a bowl and spoon the shrimp mixture on top. Add some reserved bacon and scallions to garnish.
