Fire Roasted Tomatoes
- 1 bunch of cilantro (chopped)
- 1/4 cup chopped red basil
- 1 tsp dried whole leaf thyme
- 1 tbsp whole leaf oregano
- 1/2 bunch chopped parsley
- 1 tbsp finely chopped rosemary
- 2 tbsp garlic puree
- 1/2 cup olive oil
- 1 tsp liquid smoke
- 2 tbsp cumin
- 18 peeled and seeded tomatoes
- Combine all ingredients except tomatoes.
- Peel and seed the tomatoes. I find a quick blanch in boiling water is the quickest way to do this. A few seconds in the water and the skin should come right off. Once the skin is off cut in half and remove the seeds.
- Grill cut halves of tomatoes first. Mark them and turn, then baste. Mark them again, and remove. Chop the tomatoes and combine with the remaining ingredients.
