Sweet Potato Cakes
- 5 large white potatoes, peeled and diced
- 6 to 8 large sweet potatoes, peeled and diced
- 1/2 c. bread crumbs
- 1 Tbsp. mayonnaise
- 1/4 c. skim milk
- 1 1/2 tsp. chives, freshly chopped or dry seasoning
- 1 small onion, finely diced
- 3/4 tsp. black pepper
- 1 c. shortening
- 6 to 8 large bananas (firm, not soft)
- 2 Tbsp. vegetable shortening (solid or oil)
- 4 apples (preferably green)
- 2 Tbsp. butter or bacon fat
- 1/2 c. brown sugar
- 2 Tbsp. water
- 3 to 4 c. cold, mashed potatoes
- 2 eggs, beaten
- 1 c. milk
- 1 small onion, grated fine
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 1/2 c. flour
- 1 c. bacon pan drippings or Crisco shortening, melted
- 1 tsp. baking powder
- butter or margarine to taste
- Put the pan drippings (or Crisco) in a large frying pan.
- Put on low heat while you prepare the potato pancakes.
