Mj'S Tortilla Soup
- 1 Yellow onion
- 28 ounces Diced tomatoes, drained
- 4 cups Chicken broth
- 2 cups White corn
- 2 cups Corn tortilla chips
- 1 Avocado
- 1 package Sour cream
- 1 bundle Cilantro
- 12 ounces Chicken
- 2 cloves Garlic
- 1/4 teaspoon Chicken bullion
- 1/4 teaspoon Mexican Oregano
- 2 tablespoons Oil
- 1/8 teaspoon Paprika
- 1 tablespoon Onion powder
- 1 tablespoon Garlic powder
- 1/2 cup Pickled red onions
- 1 pinch Salt and pepper
- 1 bunch Green onions
- Saute onion and garlic for 5-7 minutes. Add tomatoes and saute for 4 minutes. Next, add broth and bring to a boil and then simmer 20 minutes before adding chips. Puree 2 cups of the mixture in a blender, then recombine it with the rest in the pot. Finally, add the corn and top with your choice of tortilla stips, avocado, sour cream, cilantro, and pickled onions.
